What's Cookin in CJ's Kitchen - 15 of 90

Chicken, Broccoli, Cheese and Bacon

It was cold and rainy and I felt like soup or a pot pie and this is what I ended up with.
 I used half the bag.
 I wasn't looking for organic or free range, but this was cheaper then the normal broth at the store I went to.
 I used one cup of broth.
 Cooked the broccoli in the broth.
 Added the grilled chicken cut/shredded into pieces. I could have stopped here and added a couple carrots for chicken soup, but I wanted something creamier.
 I used 5 ounces of cheese.

 and 2 ounces of cream cheese.
 This was the finished product. The bacon was 4 pieces cooked and broken up.
 I tried making a cheese crisp in a pan out of deli cheese.
 Didn't go so well when turned over.....
 So I put a piece of deli cheese on parchment paper and nuked it. This worked better, but I think melting the cheese in the pan works better for shredded cheeses.
 Then I broke the "cheese crisp" up into pieces. It was good, but it was a bit rich tasting, I think I like it better without the extra cheese. Maybe I should have used a little whole cream instead of the cream cheese or instead of some of the normal cheese or not added the cheese crisp.
 This normal high carb chicken pot pie looked sooo good! But I tried a very small bite of it and I didn't like it anymore.... LOL. It had been about 2 years since I had tried one and I liked it 2 years ago but not now. The part without the crust tasted ok though.
