What's Cookin in CJ's Kitchen - 30 of 90

Fauxtato Cakes
I needed to use up the rest of the Fauxtatoes and I had been thinking of Salmon and Tuna patties which made me think of Crab Cakes (which I don't like) and that made me think of Potato Cakes and well.... this is what happened. LOL

I had a little over 1 cup of the fauxtatoes left and I added a little bit of leftover bell pepper and onion for flavor. I also ended up adding some grilled chicken breast to the fauxtatoes. I was thinking salmon/tuna/crab cakes and it seemed like it needed some meat I guess.... LOL. There was already bacon and cheese in the fauxtatoes. I decided to put some egg in it to help keep it together. 
 If you had about 1.5 to 2 cups of whatever you want in your fauxtatoes then I would use 4 eggs.
 I experimented a bit and the first one fell apart, so I added another egg and the other ones turned out fine.
 They were pretty good and didn't taste like cauliflower at all. I cooked them in olive oil.
 Let them drain on paper towels.
 Then I had the problem of do I eat them plain, do I top them with something?
I put sugar free syrup on one of them and it was good!!!! I put ranch on another section instead of sour cream like people put on potato cakes and it was ok, but the syrup was better. Then I put bacon and melted cheese on the other one. It was very good but the extra cheese was a bit rich tasting. I tried it with syrup on top too and it was good, but I think I would just prefer them with syrup and served with bacon. The next time I make these I'm going to leave out the chicken and just use more bacon. :)

  1. Cj, I would like to thank you for posting on my pasta quetion. Since then, daily, I have been reading more and more of your blog. I started eating low carb at the end of October. I went through the super strict two weeks, and have slowly started adding certain foods back to my diet. I had gone to the library, looking for "special" low carb recipes, buy you have retaught me that my entire kitchen is low carb!! I don't need recipes for foods I have never eaten before like lamb and veal...I just need to rethink making classic things I already have made before.
